Garlic Pesto Chicken Pizza

No Red Sauce for this one its delicious




INGREDIENTS

Pizza Crust (I prefer the already made Artisan Style Pizza Crust from Pillsbury)
1 4oz Jar of Pesto Sauce 
Minced Garlic
3 Tbsp Olive Oil
2 Small cans of sliced Black olives
1/4 Cup Dried Feta Cheese
1 Bag of Shredded White Cheeses only                               (white Cheddar, Mozzarella, etc.)
2 Cups Cubed Chicken Breast  
1 Jar Artichoke Hearts (seasoned)



INSTRUCTIONS

First you need to make your Sauce. In a blender combine Pesto 1 can Olives (drained) some minced garlic and Olive Oil. Pulse until mixed well and it looks like a oily paste green and black.

Cook the Chicken- I usually add garlic a tiny bit of Pesto, onion salt, salt & pepper.

Evenly and lightly spread the Olive Pesto Sauce on your crust. add cheeses, cooked chicken, artichoke hearts, light garlic sprinkled sparingly. You can add bell peppers, onions, bacon pieces, and cilantro (as toppings).  Top lightly with shredded cheeses and feta before cooking.

Bake at 425 for approx 15 minutes or until golden brown.






Easy Homemade Kids Favorite Pizza

So easy you kids can help. You can pick your favorite toppings.




INGREDIENTS

2 packages Pillsbury Pizza Crust Mix (you need to prepare this yourself)
1 bottle Pizza Sauce Marinade 
(Chef Boyardee is my favorite sauce)
1 Med size Bag Shredded Cheeses (Mozzarella, cheddar, Parmesan)
Optional toppings- Pepperoni, Sausage, Olives, Mushrooms, etc...









INSTRUCTIONS

Prepare crust following directions on the bag. 
Preheat oven (bag tells you the temp)
add sauce, top and bake. I use light olive oil to coat the bottom of the pan and sprinkle with my favorite seasonings, garlic powder/salt and onion powder. I prefer to bake in a deep square cooking sheet. It cooks better. 

I also let my children kneed the dough, and top the pizza as they wish. Usually we end up with half cheese half pepperoni. 

Chef Boyardee makes a pizza kit also, I personally like Pillsbury Pizza Crust better but if you want easier shopping his works.

Healthy Snack Shake BARS


SHAKE BARS (1 per day)



INGREDIENTS

½ cup honey
½ cup reduced fat peanut butter
½ cup chocolate chips (white choc, butterscotch, etc)
3 tbsp Water
1 cup Protein Powder (your flavor of choice)
1 cup quick oats
2 cups Rice Krispies





INSTRUCTIONS

Melt together first 4 ingredients
Mix dry ingredients into 8x8 pan
Mix thoroughly
Press Flat
Refrigerate for 1 hour
Cut into 8 equal bars











Healthy Diet PROTEIN BANANA PIE Recipe (instead of a shake)


BANANA PIE - Made with Protein Powder 



INGREDIENTS
1 cup Vanilla Protein Powder or your choice (or ½ cup vanilla & ½ cup tropical fruit)
2 cups skim milk
1 pkg Banana sugar free pudding
1 ready made pie crust (ex: shortbread)
1 Fresh Banana Sliced









INSTRUCTIONS

Mix Protein Powder and milk together
Add pudding
Mix well Pour into pie crust and chill for 1 hour
When chilled, add sliced banana pieces & top with Light Cool Whip

Cut into 8 equal pieces
If you are one a diet and using protein meal replacement shakes, this is a great recipe to mix it up.
Each piece equals 1 shake

Bacon Wrapped Cheese Crescents Baked NOT FRIED

Bacon Wrapped Cheese Filled Crescents- BAKED not Fried
Found this online and changed it up a bit after making it the first time.


INGREDIENTS
Bacon (cut in half then down the middle for thin strips)
Crescents (uncooked)
Monterey Jack cheese cut into cubes.









INSTRUCTIONS
Preheat oven to 400°
Cut 1 inch triangles of the crescents, place a cube of cheese into it, wrap bacon strip around each of them and place onto a cooking sheet. Bake for 13-18 minutes until crescents are  golden brown & bacon is cooked.



These make great finger foods. Our most difficult eater in the home is our 6 year old son he ate so many I thought he was going to be sick.
